[RECIPE] Carrot Cake


Do you crave for that delicious Carrot Cake you can eat at Disneyland Paris? In my opinion it is one of their best treats. And for me the best place to enjoy this delicious cake is at the Cable Car Bakeshop. If it's not available over there, then go to Market House Deli or Plaza Gardens.

Ingredients:
  • 3 eggs
  • 200 g sugar
  • 200 g flour
  • 1 sachet of yeast
  • 165 g oil
  • 3 g vanilla
  • 66 g pecans
  • 225 g carrots
  • 1,5 g cinnamon

Icing ingredients:
  • 250 g cream cheese
  • 50 g icing sugar
  • 50 g melted butter
  • Optional: lemon or orange juice


Instructions:
  1. Mix the eggs and sugar, then whisk vigorously for several minutes until the mixture turns white. 
  2. Stir in the vanilla, then gently add the oil while continuing to stir.
  3. Mix the flour, cinnamon and yeast in another mixing bowl.
  4. Gradually add the flour mixture to the sugar/egg mixture until you get an even mix. Whisk well if there are any lumps.
  5. Grate the carrots then mix with the pecans.
  6. Pour the mixture into a round mould or choose the “tea time” option and make individual cakes. The cake will rise, so leave the moulds three-quarters full.
  7. Bake for 20 minutes at 160°C.

  8. Make the icing by mixing the cream cheese and icing sugar. 
  9. Finish by adding the melted butter. Mix well!
  10. Allow the carrot cake to cool then decorate with the icing.

    Chef’s tip: Add a few drops of colouring to make a brightly coloured snack. You can also add lemon (or orange) juice to your icing, which will give the cake a hint of fruit.
